It was a long, cold, winters night. LOL, JUST KIDDING. I’ll get right to it. Can’t stand those recipe intros.
This Creamy Chicken High protein soup will have you full and happy!
Ingredients:
1 onion sautéed
3-4 carrots, unpeeled, sauteed (I keep the skin on bc there’s lots of nutrients there. But if they aren’t organic, I would peel them).
3 garlics, diced
1 can garbanzo/northern white bean drained and rinsed
1 1/2 cups of cottage cheese, blended smooth (you really need it to be smooth, no chunks!)
1 can of rotel
1 tsp chili powder
chili flakes(I like mine a little spicy)
1 large box of bone broth (I prefer over stock for higher protein)
salt and pepper to taste
1 lb cooked shredded chicken
Noodles optional but I chose none for a no carb day. If you choose noodles, they should be added right before serving so they don’t disintegrate. Often, I just keep them on the side and add when ready to eat.

Directions:
In a dutch oven, saute onions, carrots in olive oil or butter. Add diced garlic in once carrots are soft so as not to burn garlic. Degalze the pan with bone broth. Salt and pepper as you go! Add the rest of the ingredients in no particular order and let simmer for at least 30 minutes. Reheats perfectly.
