I saw this delicious looking pasta salad on a reel and in a miracle of miracles, I actually made it! We had a neighborhood dinner and one thing about me is that I will take risks and have never made something but still bring it to an event. But when I tasted the dressing, I knew it would go over well. Many asked for the recipe!
This was for pasta salad but I had too much lettuce in the garden so I modified it while (mostly) keeping the base sauce from “Rockin’ Meals”.
I didn’t measure the lettuce but it was a giant silver chef's bowl so you’ll have to wing that. Here is the base:
Lettuce (probably 6-7 cups)
1/2 onion diced
4 reg tomatoes
If you want the pasta salad, just don’t add the lettuce. Use a hardy noodle tho.
5 or more strips of bacon, cooked and crushed
a bunch of cilantro, chopped
3 green onions, including the white part
a bag of frozen corn, cooked with 1 tsp each chili powder, garlic powder, onion powder, salted.
1 minced jalapeño, no seeds(really gotta check how hot that pepper is though. I only added half bc it was so spicy)
it called for cojita cheese but I didn’t have that so just left it out. But sounds delicious.
Magic Dressing:
1 cup plain greek yogurt
½ cup mayonnaise (I used homemade, so easy and delicious, never going back. I’ll post below.)
Juice from 2-3 limes
2-3 tbsps adobo sauce from a can of chipotle peppers (I never use a whole can and freeze what I don’t use. It’s handy for chili’s and sauces and 100 percent ups the flavor. DO NOT OMIT. But it can be spicy so beware.)
1 clove of garlic minced
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste (you need more salt than you think).
Then I mixed the salad with all the dressing, right before dinner and I think this also makes a salad! Everything was evenly mixed and it was so gooooood. There were no leftovers. If it’s pasta salad, it will likely get better with time in the fridge.
Another way to use this sauce is on a slaw mix. We had leftover brisket so I chopped that up and then added the sauce to red cabbage and OMG, delicious. I ate a giant bowl of it in 2 days. If my poop is purple, I’ll understand lol.
Homemade Mayo:
one egg
1/2 cup olive oil
1 clove of garlic
juice of half a lemon
salt
I use an immersion blender in a ball jar and it was super easy, but you could do this in a blender too. You’ll need to use it within 2 weeks IMO. IT IS SO GOOD AND INEXPENSIVE TO MAKE. I will never ever go back!
